Although sugo sounds like a complex dish originating from Japanese cuisine, it is the most common and simple Italian sauce that is eaten with pasta or meatballs. Sugo di Pomodoro is usually thought of, which is an authentic Italian tomato sauce, and its preparation is quick and easy.
Recipe for sugo
Components:
- 2 tablespoons of extra virgin olive oil
- 1 head of onion
- 4 cloves of garlic
- 420 ml of pureed tomatoes
- ¼ cup fresh basil
- salt to taste
Preparation:
Heat the oil over low heat, then add finely chopped onion and garlic. Fry until soft and glassy, about five minutes, then add the tomatoes, basil and salt.
Cover and simmer over medium heat, stirring occasionally, until the tomato sauce has thickened, about 20 minutes.
Before serving, remove the garlic.
